In Apocalypse Wow, yet another Eleventh production, the Vertigo FMR wine cellar gave way to… another food cellar, Fugazi – blaze taken from an American expression designating GIs ambushed during the Vietnam War. The scenario ? A lookout all in scraped walls, globe lighting and dried flowers, managed by Adrien Vernet (ex-Le Mauri 7) and Benjamin Perrier (boss of Peco Peco). That evening, their tapassiettes had a taste of coming back: kiki gnocchi pan-fried with black garlic butter and shitake; agnolotti with perfectly al dente beef cheek, adorned with a red wine and candied lemon sauce; then mussels with 'nduja juice and lots of fresh herbs
